Features: Dried scallop, also known as "conpoy". Since the Qing Dynasty, it has been revered as one of the "Eight Treasures of the Sea". It boasts a sweet and savory flavor with a neutral nature, making it suitable for general consumption. Rich in protein, it delivers a delightful umami taste with a sweet aftertaste, making it an excellent ingredient for enhancing the flavor of dishes. Dried scallops are graded by size, with larger ones generally offering higher nutritional value.

Nutritional Benefits: Dried scallop nourishes yin and tonifies the kidneys. It is suitable for individuals recovering from illness or postpartum women.

Recommended Dishes: Whether it's the refreshing conpoy and loofah soup for summer heat relief, a warm chicken stew for winter, homemade conpoy and egg white fried rice, or simple conpoy porridge, dried scallop is an indispensable ingredient.

Cooking Instructions:

  1. Rinse the dried scallops with clean water.

  2. Soak them in water for about 2 hours until rehydrated.

  3. Remove the scallops and place them in a bowl. Reserve the soaking water.

  4. Add ginger juice and Shaoxing wine to the bowl with the scallops.

  5. Pour the reserved soaking water into the bowl, ensuring the scallops are fully submerged. Soak for another 2 hours.

  6. Meanwhile, soak garlic in water for 30 minutes, then peel and fry until fragrant.

  7. Place the fried garlic on top of the scallops, add water, cover, and steam for 30 minutes.

  8. Finally, drain the scallops before use.

Suitable For: Generally suitable for all individuals.

Storage Method: Store in a cool, well-ventilated place. For longer storage, seal and keep in a refrigerator at 0-8°C.
