Cooking method: South African abalone needs to be soaked before cooking, so that the hard dried abalone becomes soft and can absorb the flavor. Soak the abalone in water for two days, changing the water every day or putting it in the refrigerator. Then cut off the intestines and mouth parts, and wipe the edges of the abalone clean. Boil it in water for 45 minutes, and do not keep the water used to boil the abalone. Change the water and boil for another 5 hours, adding ingredients such as old chicken and spare ribs. Boil for another 5 hours the next day.
