象拔蚌鮑魚螺頭雙果湯

食材
• 乾象拔蚌8條
• 小乾鮑魚8隻
• 細螺頭4隻
• 碎瑤柱適量
• 圓肉20粒
• 沙蔘少許
• 玉竹少許
• 蘋果1個
• 陳皮1角
• 薑5片
• 無花果2個
步驟:
1. 小鮑魚沖好放入清水中浸發一日, 12小時換水一次,煲湯前與薑片放入清水中, 煲至微滾後取出, 放涼以小刷在清水中擦乾淨, 剪去腸後洗好待用
2. 乾象拔蚌、螺頭和瑤柱沖乾淨,以暖水浸過面,浸一小時後取出, 剪去螺頭的腸臟,水留起備用
3. 圓肉、沙蔘、玉竹和無花果,沖乾淨後以清水浸十五至三十分鐘後取出待用
4. 豬展和薑片放入清水中, 小火煲至微滾後關火, 取出沖乾淨待用
5. 蘋果刨去表皮, 切件去核待用
6. 陳皮沖乾淨, 連兩片薑、螺頭湯跟八碗清水倒入煲內,放入所有材料, 以中火煲滾,煲三十分鐘後轉小火, 煲兩小時即成。
